Booklish #3: Rorschach Cheesecake

Spiced Oreo Crust

Ingredients

  • 10 Oreo crusts (cream removed, set aside for Golden Oreo crust)
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/4 cup melted unsalted butter

Directions

  1. Crush Oreo crusts thoroughly in large bowl.
  2. Mix in black pepper and paprika.
  3. Pour butter over mixture and stir until even. Mixture should be crumbly.

Golden Oreo Crust

Ingredients

  • 10 Golden Oreos
  • Cream filling from regular Oreos (see above)
  • 1/4 cup white sugar
  • 1/4 cup melted unsalted butter

Directions

  1. Crush Oreo’s thoroughly in large bowl.
  2. Mix in sugar and cream.
  3. Pour butter over mixture and stir until even. Mixture should be crumbly.

Cheesecake Filling

Ingredients

  • 3 8 oz creamcheese packs
  • 1 8 oz can condensed milk
  • 3 eggs

Directions

  1. Soften creamcheese in microwave or set outside for an hour.
  2. With an electric mixer, beat together all ingredients until smooth.

Chocolate Ganache

Ingredients

  • 6 oz Ghirardelli semi-sweet chocolate chips
  • 1/4 cup heavy cream

Directions

  1. Pour chips into a small saucepan over medium-low heat. Stir constantly until chocolate has been melted smoothly.
  2. Stir in heavy cream until smooth.

Other

  • 8 oz Ghirardelli white chocolate chips
  • 4 oz Ghirardelli 60% cacao chips

Construction:

  1. Press the crusts firmly into a pinwheel on bottom of a 10″ springform pan in alternating eighths.
  2. Pour 2/3 of the cheesecake filling on top of the crust.
  3. Using a wooden spoon, place gobs of ganache randomly on top of mixture
  4. Pour rest of cheesecake filling and spread evenly.
  5. Bake for 50 min. at 350 F.
  6. In a saucepan over medium heat, melt 8oz Ghirardelli white chocolate chips. Immediately transfer to cheesecake once soft and spread over top surface.
  7. In a saucepan over medium heat, melt 4oz Ghirardelli 60% cacao chips. Using a wooden spoon (or more precise tool), “paint” a rorschach image onto white chocolate surface.
  8. Cool in refrigerator overnight. Serve cold. Enjoy!
